Chicken & Broccoli Frittatas



INGREDIENTS 9 oz Broccoli

1 lb Chicken Breast (Skinless)

1/2 c Wheat Flour

1/2 c Parmesan Cheese

2 Eggs

4 Garlic Cloves (minced)

3-4 tbsp Cannoli Oil

Salt & Pepper to taste


SAUCE:

1/3 c Sour Cream

4 tsp Ketchup

2 tsp Siracha

2 tsp Garlic Chili Sauce

DIRECTIONS:

Pre heat the oven to 210 F (100 C)


Steam the broccoli and chop it into fine bits


Slice the chicken breast finely into bit size bits and combine the chicken and broccoli into a medium size bowl.


Add to the bowl the flour, parmesan, 2 eggs, garlic, salt and pepper and mix well.


In a medium sauce pan add about 3-4 tbsp of cannoli oil and heat it.


Take mixing spoon size portions of the broccoli and chicken mixture and pat it together placing them into the pan to cook.


Cook on both sides for about 3 min and then move to the oven to stay warm.
