Cheesy Asparagus with Bacon


  • 1 lb Asparagus (cleaned & cut)

  • 4 oz Bacon

  • 2 Egg Yolks (lightly beaten)

  • 1/2 Tbsp Unsalted Butter

  • 4 Tbsp Finely Grated Parmesan

  • 1/4 tsp Pepper

  • Salt to taste


Pre-heat skillet and cook the bacon until crispy about 5 - 8 min. Remove the excess fat from the bacon and set to the side.

In a pot of boiling water, add the Asparagus and cook until the asparagus is crisp and tender.

Remove the water and add the bacon to the pot along with the egg yolk and bugger.

Stir until the butter has completely melted and then add in the Parmesan, salt and pepper

Once the cheese has combined to the Asparagus serve and enjoy this healthy side dish!
