Coconut Oatmeal Bars 🥥


INGREDIENTS:

1 cup toasted coconut flakes

3/4 cup peanut butter

1/3 cup honey

2 tbsp coconut oil

1/2 tsp coconut extract

2 cups rolled oats


DIRECTIONS:

Toast the raw coconut flakes over a medium low heat. (be sure to watch them closely as they can overcook quickly)


Once the coconut is done add in the peanut butter, honey, coconut extract and coconut oil to the pan.


Continue to stir until the mixture is smooth-ish.


Slowly add in the oats, about 1/2 a cup at a time, mixing them into the coconut completely.

Once combined place the mixture into a 9x9 pan with wax paper lining it and toss in the fridge for about an hour. (longer is always better though)


Once it has hardened pull it out and cut it up and enjoy!


**You can always sprinkle a bit more of the fresh coconut shavings (as photographed) or add some chocolate drizzle to the top before refrigerating if you want to get fancy. 😋
