Cream Cheese & Spinach Stuffed Chicken


INGREDIENTS

4 Chicken Breasts (500 g)

9 oz Spinach

4 oz Cream Cheese (softened)

1/4 Cup Parmesan Cheese

1 Tsp Parsley

1 Tsp Italian Seasoning

Salt & Pepper

Toothpicks


DIRECTIONS

Salt, Pepper and Italian Season on both sides of the chicken. Use a sharp knife, cut a pocket into the side of each chicken breast and set aside.


In a sauce pan over a medium heat add half the olive oil and sauté the spinach. Once the spinach is done, place it on some paper towels to remove some of the excess water/moisture.


Place the pan back on the heat and quickly sear of the chicken 3-4 minutes on each side. Take the chicken off and set aside again


In a medium bowl add the spinach, cream cheese, parmesan and parsley and mix it together until fully combine.


Next stuff the spinach mixture into the chicken and use the toothpicks to secure and lock the mixture inside.


Place the chicken back into the pan along with the rest of the olive oil (you may need to add a little extra) and cook the chicken for about 4-5 minutes on each side until golden brown or the internal temperature of the chicken is 160°F.


*I served this with a baked Broccoli Cheese because I had some of the spinach mixture left over and I placed that on top of the broccoli then topped with cheese and baked but you can use whatever delicious side you want!
