Stuffed Mushrooms

16 oz Mushrooms (estimate 45 mushrooms)

mushroom stems removed and diced

1 Tbsp Olive Oil

½ garlic bulb minced

¼ cup grated Parmesan cheese

¼ cup feta

¼ tsp onion powder

¼ tsp black pepper

¼ tsp chili peppers


Heat oven to 350° F

Combine all of the above ingredients into a bowl and mix. Place all the mushroom caps on a backing sheet. Fill each cap with some of the mixture. Bake for 20 min and serve!


Per Serving: 9.5 cal, 2 g fat, .2 g sat fat, 0.4 mg sodium, 0.7 g carb, 0.1 g fiber, 0.1 g sugar, .5 g protein.


In case you can’t stop and eat them all!

Total: 427 cal, 37 g fat, 12 g sat fat, 829 mg sodium, 30.2 g carb, 4.4 g fiber, 8 g sugar, 24.64 g protein.
