Tomato Pepper Pork Chops



INGREDIENTS:

2 Tbsp Olive Oil (divided)

2 Pork Chops

4 Garlic Coves (minced)

1/2 Cup onions (sliced)

2 Tomatoes (cubed)

1 tsp Italian Seasoning

½ tsp dried oregano

½ Cup Water

2 Medium Bell Peppers (sliced)

Salt & Pepper to Taste


DIRECTIONS:


Salt and Pepper both sides of the pork chops and heat 1 tbsp olive oil in a pan over a medium heat.


Once the pan is warm, place the pork in and sear both side for about 5 min or until brown. Take the pork out of the pan and set aside.


In the same pan, add 1 tbsp olive oil, garlic cloves and onions. Sauté for about 5 minutes and then add in the cubed tomatoes.


Add in the Italian Seasoning, Oregano and more salt and pepper (if you would like). Stir everything together for about 2 minutes and add the pork chops back into the pan.


Add 1/2 cup of water to the pan and cover. Allow to simmer for about 10 minutes.


Remove cover flip the pork chops and add in the bell peppers. Place the cover back on and continue to allow the dish to simmer for about 5 minutes or until done!


Serve and Enjoy! I served with some cheese broccoli but whatever veggie you would prefer is perfect!
