3-4 Chicken Breasts
1 Onion Sliced
8 oz Mushrooms Sliced
2 Tbsp Olive Oil
1/2 Garlic Bulb minced
1 tsp garlic powder
1 tsp parsley
1/2 tsp cayenne pepper
1 cup shredded mozzarella
1/2 cup chicken broth
Salt & Pepper
Pre-heat oven to 375 F (190 C)
Put Onions, minced Garlic, Mushroom, and 1/2 tbsp of the olive oil into the sauce pan and saute.
While cooking season chicken breast with garlic, parsley, salt & pepper.
Once onion and mushroom mix is cook set aside and cook the chicken breast with the rest of the olive oil in the pan. Cook the chicken on all sides until it is slightly brown.
Remove chicken and set aside.
Place half of your onion and mushroom mix into a baking dish (9x9) then place chicken over it.
Add the chicken stock to the skillet and heat it too a bowl then pour the liquid over the chicken breast.
Add the rest of the onion and mushroom mix to the top of the chicken and add top with the mozzarella cheese.
Place in the oven and cook for about 20 min or until done.
