INGREDIENTS 2 Lbs Chicken Thighs (skin optional)
1/2 Cup Olive Oil
1/4 Cup Cilantro (chopped)
1/4 cup Lime Juice
4 Garlic Cloves (minced)
2 Tsp Red Pepper Flakes
1 Tsp Cumin
1 Tsp Paprika
1/2 Tsp Cayenne Pepper
1 Tsp Butter
Salt & Pepper
DIRECTIONS In a medium/Large mixing bowl combine all of the ingredients, except the chicken thighs and mix well.
If you want skinless, remove the chicken skin at this time. Pat the chicken on both sides with a paper towel, salt & pepper them generously.
Add the chicken to the mixing bowl. Use tongs toss and flip the chicken regularly until it is well coated in the marinade. Let the chicken marinate for 15 - 20 min depending on how much time you have.
*The longer you marinate the better
In a pan, heat the butter over a medium-high heat. Once the pan is hot, add the chicken thighs and cook for 6 - 8 min per side depending on how large the chicken cuts are. Continue cooking until there is no longer any pink and the internal temperature is 165°F (74°C).
Once the chicken is finished cooking, sprinkle chopped cilantro over the chicken!
Serve with your favourite veg and enjoy!
