Lemon Garlic Chicken w/ Mushrooms


INGREDIENTS 1 lb Skinless Chicken Thighs (Boneless)

2 Tbsp Olive Oil (divided)

1 Tbsp Soy Sauce

1/2 Yellow Onion (diced)

3 Garlic Cloves (minced)

1/2 Tsp Thyme

1 Lemon

1 Cup Chicken Stock

8 oz Mushrooms (sliced)

1 Tsp Flour

Salt & Pepper to Taste



DIRECTIONS Pre-Heat the oven to 400°F (205°C)


Season both sides of chicken thighs with salt and pepper


In a sauce pan over medium heat half the olive oil and then place the chicken in it. Sear off each side for 3-4 minutes or until golden brown. Remove and set the chicken aside.


Using the same pan, add the remaining olive oil, garlic, thyme, mushroooms and onions and sauté for about 3 minutes. Sprinkle in a little more salt and pepper and squeeze in the juice from one lemon.

*to get the lemon nice and juice before you cut into it roll it on the counter putting a little pressure on it first for about 20 seconds


Add chicken stock and soy sauce to onions and stir to combine.

Bring mixture to a simmer and then add in the flour, stir in fully and return the mixture to a simmer.

Return seared chicken thighs to pan and spoon some of the broth over the top of them to help them stay moist for about 5 min.


Remove the chicken and place it into the oven for about 10 - 15 minutes until the chicken is cooked through (160°F).


Serve immediately & Enjoy! *We enjoyed with cauliflower rice, but you can enjoy with something else so it looks as good as it tastes with a bit more colour :-)
