Lemongrass Thai Ground Pork


INGREDIENTS:

1 lb Ground Pork (or Beef)

2 Tbsp Olive Oil (divided)

1 c Green Beans

1/2 c Sliced Carrots

1/4 c Lemongrass (finely cut)

3 Garlic Cloves (mined)

1 Shallot (minced)

1/4 c Fish Sauce

1/4 c Brown Sugar


DIRECTIONS:

In a pan place 1 tbsp of olive oil and the ground pork (or beef) in and cook over a medium heat for about 8 minutes.


Remove the pork from the pan, strain and set aside. Reduce the heat slightly and place the green beans and carrots in. Cook for about 5 minutes or until the carrots start to soften and remove.


Wipe out the pan again and then add the remaining olive oil. Place the lemongrass, garlic and shallots. Cook until you can smell the garlic and lemongrass for about 5 minutes.


Add in the fish sauce and brown sugar and continue to stir. Once mixed add the pork (or beef) back into the pan and toss until fully coated.


Return the veggies to the pan and stir in fully.


Serve over rice.
