Parmesan & Sage Bone-In Pork Chop
INGREDIENTS
3/4 c Italian Breadcrumbs
1/2 c Grated Parmesan Cheese
2 oz Fresh Sage (finely chopped)
1 tsp Grated Lemon Peel
2 Large Eggs
1/4 c Flour
2 bone-in pork chops
1 tbsp Butter
2 tbsp Olive Oil
Salt & Pepper
DIRECTIONS
Preheat oven to 425°F (220°C).
Season both sides of the pork with salt and pepper.
Mix breadcrumbs, cheese, fresh sage and lemon peel in a bowl and set aside.
Whisk eggs in a second medium bowl.
Place flour on plate. Coat pork on both sides with flour; and shake off the excess.
Dip the floured pork chops into the eggs and then coat on both sides with the breadcrumb and cheese mixture.
In a large skillet melt butter and add the olive oil. Once the skillet is HOT HOT add the pork chops and cook both sides until golden brown, about 90 seconds.
Move the pork chops to the oven (either in a oven friendly skillet or a glass dish) and bake for about 10 mins or until the pork is 150°F inside
**While pork is in the oven it is the perfect time to either rice some cauliflower , sauté up some greens, or steam up some broccoli for a veggie delicious side! **
