Pesto Mediterranean Chicken


1 Lb Skinless Chicken Press

4 Tbsp Pesto

1/4 tsp Cummin

3-4 Campari Tomato Sliced (1 diced)

1 Cup Mozzarella Cheese

1/4 tsp Cayenne Pepper

Salt & Pepper to Taste


Pre heat the oven to 400° (200°) Pat the chicken breast dry both sides and salt and pepper both sides generously. Lay the chickens on a 9x9 glass cooking pan and cover each piece with a thin layer of pesto.

Top the pesto with a thin slice of tomato.

Dice up the remaining tomato and surround the chicken to create a sauce.

Sprinkle the mozzarella and place in the oven.

Bake for 15 - 20 min
