Seared Pork in Mushroom Gravy
4 Pork Chops
10 oz Mushrooms (Sliced)
4 Garlic Cloves (minced)
1 Cup Beef Broth
1 Tsp Mustard
2 Tbsp Flour
2 Tbsp Olive Oil
2 Tbsp Unsalted Butter
Salt, Pepper & Paprika
Season both sides of the pork thoroughly with salt, pepper and paprika.
Place 2 tbsp of olive oil in a pan and sear the pork on both sides, about 2 -4 minutes or until brown then remove and set to the side.
In the same pan melt 2 tbsp of butter and add the mushrooms and cook for about 5 min.
Add the garlic and mustard and continue to cook for 1 - 2 minutes.
Sift the flower into the mushroom mixture and mix in. Slowly add in the broth, string to remove the lumps and thicken, about 5 minutes
Add the pork back in and cook until done or 145F
